I made this for the girls at the Christmas cookie swap and my husand liked it so much, I had to make another one today for him for dinner.
Recipe is from The Spirit of Christmas Volume III
Things You'll Need:
1 lb. spicy pork sausage ( I used one pound of spicy Italian sausage that I removed from the casings)
1-10oz. can refrigerated prepared pizza crust dough
Loaf pan (sprayed with non-stick spray)
4 cups grated mozzarella cheese
1/2 cup tomato sauce (I use pre-made Italian sauce in a jar)
1 tsp. oregano
1 tsp .basil
1-10 oz. package frozen spinach, thawed and drained
1 egg, lightly beaten
1-7 oz. package sliced pepperoni
12 large pimentos stuffed green olives, cut in half lengthwise
Tin foil
Preheat oven to 400 degrees. Brown and drain pork sausage. Set aside. Unroll dough and cut off 1/4 inch of dough crosswise. Set the 1/4-inch piece aside. Line the loaf pan with the large piece of dough. Moisten the dough with water at the corners and press to seal.
Pour 1/2 of the mozzarella cheese on the dough and top with the sausage. Spoon the tomato sauce evenly over the sausage and sprinkle with oregano and basil.
Combine spinach with the egg in a small bowl. Stir well and spread over the sauce. Layer the pimentos on top of the spinach and top with the remaining mozzarella cheese. Top with the olive halves.
Cover with the second piece of dough and crimp edges to seal. Cut slits in the top of the dough to allow steam to escape
Bake for fifty minutes or until crust is well browned. If crust browns too quickly, cover loosely with tin foil.
