Chicken Soft Tacos Using Crock Pot


3 chicken breasts skinless and boneless
14.5 oz can of diced tomatoes with chili peppers
1 low sodium packet of Taco Seasoning Mix.

Tortillas
shredded cheddar
shredded lettuce
diced tomatoes
sour cream or guacamole


Mix together the tomatoes and the seasoning mix in a bowl.
Place chicken in the bottom of the crock pot. Pour the tomato mixture over the chicken. Cook on low for 8 hours. After the chicken is cooked, shred it with a fork. Warm tortillas in frying pan and let everyone have at it with toppings of shredded lettuce, cheddar cheese, diced cold tomatoes and sour cream or guacamole.

Side dish of Mexican rice.
